Definition of the word grits

The word "grits" originally refers to ground corn, specifically hominy (i.e., maize that has been treated with an alkali solution to remove its hull and germ). The name "grits" is derived from the Old English word "grytt," meaning "coarse meal." This term was used to describe the consistency of the ground products made from wheat, barley, and other grains. In the 17th century, English settlers brought the practice of growing maize (corn) to the American colonies. The Native Americans, already proficient in cultivating and processing corn, adopted the English word "grits" for their own ground corn, which they prepared and served in various ways. The use of grits as a seasoning, porridge, or side dish remained popular in the Southern United States, where it is still enjoyed today.
